This is a healthy vegetarian salad recipe serving 2. It is ready in 15 minutes or so.
- 1 cup of fresh parsley
- 1 cup of fresh coriander
- 3 or 4 stalks of celery
- 3 or 4 spring onions
- 1 small red onion
- Juice of half a freshly squeezed lemon
- 1 tablespoon of olive oil
- salt and pepper
- handful of pomegranate arils
- handful of pine nuts
Wash, remove the thicker stems of the parsley and coriander, and chop them. Wash and slice the celery and spring onions. Peel and finely chop the red onion. Put everything in a serving bowl. Reserve.
In a small bowl, whisk together the lemon juice and olive oil until smooth. Season with salt and pepper to taste.
Add the oil mixture, pomegranate arils and pine nuts to the serving bowl, and toss well. It is ready!
