Whole-wheat Pain Perdu pudding

 

This recipe serves 6, and is ready in 55 minutes or so.

Ingredients:

Whole-wheat bread – the number of slices to use will depend on the size of the oven dish: mine is round, 17 cm in diameter and 9 cm high, and I used 7 slices.
4 eggs
2 cups of milk
1 tsp of butter to grease the oven dish
½ cup of demerara sugar
1 tsp of pure vanilla extract
1 handful of raisins
Clear honey for serving

Preparation:

Preheat the oven at 180 degrees Celsius.

Cut the bread slices into quarters. Grease the oven dish, and arrange the bread inside with the slices standing. Bury the sultanas between the slices.

In a bowl, whisk together the eggs, milk, sugar, and vanilla extract. Pour slowly the egg mixture over the bread, and with a fork press gently the slices into the mixture.

Bake for 45 minutes or so until ready (insert a toothpick into the centre of the pudding. If it comes out clean, the pudding is ready).

Serve the pudding warm, with clear honey.
