


This is a healthy food recipe serving 2, and is ready in 45 minutes or so.
Ingredients
- 500 gr of frozen edamame, defrosted and shelled
- 1 small red onion, peeled and finely chopped
- 2 garlic cloves, peeled, germ removed, and crushed
- 1 handful of coriander leaves, finely chopped
- 2 teaspoons of ras el hanout
- 1 tablespoon of toasted sesame seeds
- 1 large egg, beaten
- 2 tablespoons of dry breadcrumbs
- Salt and pepper
- 1 tablespoon of olive oil
Preparation
Preheat the oven at 200 degrees Celsius.
Dry as much as possible the soya beans with a paper towel, and place them in a food processor. Blend to obtain a rough paste.
Transfer the paste to a bowl and combine with the onion, garlic and coriander. Add the ras el hanout and sesame seeds. Stir in the beaten egg and breadcrumbs. Season with salt and pepper to taste.
With wet hands, divide and shape the mixture into 8 golf ball-sized falafels. Brush each falafel with some olive oil. Bake for 15-20 minutes until golden-brown.
