This is a healthy food recipe serving 2, and is ready in 40 minutes or so.
- 1 lemon
- 1 medium-sized cauliflower, cut into florets
- 1 tablespoon of olive oil
- Salt and pepper
- ¼ cup of freshly grated parmesan
- 1 tablespoon of capers, rinsed and drained
Preheat the oven at 230 degrees Celsius.
Peel the lemon, and gently peel each lemon segment.
In an oven tray, toss the florets, lemon segments, olive oil, salt and pepper. Mix well to cover the florets with oil. Roast for 25 minutes or so. Turn once half way through.
Remove from the oven, and transfer to a serving bowl. Add the capers and parmesan. Stir well and serve!
