Peach panna cotta

This is a healthy food recipe serving 2 (165 calories per serving). The preparation time is 10 minutes or so, plus between 4 to 6 hours in the fridge.

Ingredients

  • 1 teaspoon of unflavoured gelatin powder
  • 2 tablespoons of cold water
  • ½ cup of half and half
  • ½ cup of 1% milk
  • 4 peach halves in light syrup, finely mashed

Preparation

Whisk the gelatin powder with the cold water, and set aside for 5 minutes.

In a small saucepan over medium heat, heat the cream and milk until boiling point – about 5 minutes. Remove from the heat and stir in the peach purée.

Add the gelatin to the mixture while stirring vigorously until completely dissolved.

Transfer to 2 serving glasses. Cover and let it cool at room temperature. Refrigerate between 4 to 6 hours until the panna cotta is set.
