


High in vitamins A and C, and a good source of potassium and dietary fibre, this tomato and pomegranate salad is a healthy food recipe. It serves 2 (112 calories per serving) as a starter, and is ready in 10 minutes or so. In the week I open a pomegranate, I try to add the seeds to every salad and dessert where and when possible! Ingredients
- 1 tablespoon of olive oil
- 1 teaspoon of balsamic vinegar
- Salt
- 2 tomatoes, finely diced
- 3 tablespoons of fresh pomegranate arils
- 1 small handful of fresh coriander leaves, chopped
- 2 spring onions, chopped
Preparation
In a small serving bowl, mix the olive oil and balsamic vinegar. Season with salt to taste.
Add the tomato, pomegranate, coriander leaves and spring onion. Toss well, and serve!
