High in vitamins A and C, and a good source of potassium and dietary fibre, this tomato and pomegranate salad is a healthy food recipe. It serves 2 (112 calories per serving) as a starter, and is ready in 10 minutes or so. In the week I open a pomegranate, I try to add the seeds to every salad and dessert where and when possible! And here are two other recipes from the blog using pomegranate: Green salad with pomegranate and Healthy fresh mint and red fruit yogurt

- 1 teaspoon of balsamic vinegar
- 2 tomatoes, finely diced

- 1 small handful of fresh coriander leaves, chopped
