


I made this winter spiced chicken en papillote for our Christmas dinner. It’s delicious, festive, and simple to prepare. The quantities here serve 2. It’s ready in 45 minutes or so.
Ingredients
- 1 tablespoon of olive oil
- ½ teaspoon of ground cinnamon
- ¼ teaspoon of ground ginger
- ¼ teaspoon of ground cloves
- A pinch of ground nutmeg
- 2 skinless and boneless chicken breasts (about 300 g)
- Salt and pepper
- 2 small cinnamon sticks
- 2 star anise
Preparation
Preheat the oven at 180 degrees Celsius.
In a small mixing bowl, mix the olive oil, ground cinnamon, ground ginger, ground cloves and ground nutmeg.
Place each chicken breast on a foil sheet of about 30 cm x 30 cm, and brush the chicken with the spiced oil mixture. Season with salt and pepper to taste. Place a cinnamon stick and star anise on each chicken breast. Close the foil and put in the oven for 30-35 minutes, or until the chicken is cooked through.
Yummy with the Roasted winter vegetables with chestnuts.
