A super quick-and-easy-and-healthy recipe to prepare – it is morning after all!
(Well, I have to say: I eat porridge at any time of the day, and particularly at lunch when I am short of time.)
This blueberries oat porridge is ready in less than 10 minutes. The quantity is for 1 person (337 calories)– generous portion, or 2 persons – small portions.
- 1 small banana, peeled and cut into slices
- ½ cup of rolled oats
- ½ cup of water
- ½ cup of low-fat milk
- 3 tablespoons of frozen unsweetened blueberries
- 1 teaspoon of honey
Keeping 2 or 3 slices for the decoration, mash the banana with a fork in a serving bowl.
In a small saucepan over medium-high heat, add the oats, water and milk. Stir in the frozen blueberries, and cook according to the package directions of the rolled oats. (The oats that I buy are quick cooking. So stirring continuously, I bring to a simmer, and cook for 1-2 minutes more.)
Transfer the porridge to the serving bowl, and stir to combine with the banana. Decorate with the banana slices and drizzle with the honey. Serve immediately!
