


Beetroot is an excellent source of folate, and a very good one for manganese, potassium and copper. It is also a good source of dietary fiber, magnesium, phosphorus, vitamin C, iron and vitamin B6.
This healthy beetroot and rocket sautéed makes a great side dish, for example with grilled chicken breast. It is also excellent eaten as a main dish with side salads.
The quantities in the recipe are for 2 people (129 calories per serving). The dish is ready in 30 minutes or so.
Ingredients
- 1 tablespoon of olive oil
- 3 medium fresh, raw beetroot, peeled and sliced thinly
- ½ small onion, peeled and sliced
- 2 garlic cloves, minced
- Salt and pepper
- 2 cups of rocket, washed
Preparation
In a skillet over medium-high heat, heat the olive oil. Add the beetroot, onion and garlic. Season with salt and pepper to taste. Stirring often, cook uncovered for 20 minutes or so, or until the beetroot is tender.
Stir in the rocket, and cook 3 minutes more.
Serve at once.
