


An easy peasy recipe ready in less than 35 minutes! The quantities here are for 2 (405 calories per serving).
Ingredients
- 2 salmon fillets (about 140 g each fillet), skin removed
- 1 tablespoon of olive oil
- Salt and pepper
- ½ tablespoon of butter
- 15 leaves of fresh sorrel, it is about 2 cups when chopped
- ½ cup of half and half
Preparation
Preheat the oven at 215 degrees Celsius (415 degrees F).
Brush the salmon fillets with olive oil, and season with salt and pepper to taste. Bake in the oven between 10 to 15 minutes according to the thickness of the fillet. Keep an eye on the cooking in order not to overcook the salmon!
In the meantime: in a frying pan (but not in a cast iron or aluminium cookware!) over high heat, melt the butter and sauté the sorrel leaves for a few minutes until melted. Stir in the cream, and season with salt and pepper to taste. Cook for 1 minute more.
Serve at once!
