


These orange and goji berries ice pops are low in unrefined sugar, and are a healthy afternoon snack. They are also lovely for breakfast when it is hot outside – as it is the case pretty much every day during the summer here!
The quantity in the recipe make 8 pops. I use the ice pop moulds (they are quite small) bought from Ikea. I saw they are also sold online at Amazon (affiliate link).
Ingredients
- ½ cup of fromage blanc (I use the 5% one)
- ¾ cup of whole milk
- ½ tablespoon of dried goji berries, rehydrated for a couple of minutes in warm water
- Juice of a freshly squeezed orange
- 1 tablespoon of chia seeds
- 1 tablespoon of honey
Preparation
In the blender, add the fromage blanc, milk and goji berries, and blend to chop the berries and combine. Transfer to a measuring jug, and stir in the orange juice, chia seeds and honey. Pour carefully the mixture in the pop moulds – do not fill up to the top, but leave 0.5 cm or so. Clean with a towel the splatters if any, close the mould with the stick-lid, and freeze for 5 hours (the pops can stay in the freezer for up to 2 weeks). Before eating, run the mould under water for a few seconds to easily release the pop from the mould.
