


From farm to table, this is the simple compote I made with fresh white peaches and green almonds from the souq.
Ingredients
- ½ tablespoon of freshly squeezed lemon juice
- 1 tablespoon of water
- A pinch of salt
- 1 tablespoon of Demerara sugar
- ½ teaspoon of pure vanilla extract
- 3 large fully ripe peaches, pitted and diced (I used white peaches)
- 1 star anise
- A small handful of peeled fresh green almonds
Preparation
In a small saucepan, mix the lemon juice, water, pinch of salt, sugar, and vanilla extract, until the sugar is dissolved. Add the peach and star anise, and stir well for the peach to be covered with the sugary liquid. Stirring occasionally, cook over medium heat for about 10-12 minutes, or until the peach is soft and in compote (with some chunks remaining).
Remove from the heat, stir in the fresh almonds, and let it cool covered. Serve warm or cold, on its own or with yogurt.
Store in an airtight container in the fridge, and eat within 2 days.
