Here is the simple method I use to make low-fat French fries. These oven-baked fries are not as crispy as the ones deep-fried in oil, but they are lovely, and healthy.
Usually I use white, classic potatoes to make fries. But I found these purple potatoes (Purple Majesty) at the market, and as I never tasted them before, I decided to give it a go and make purple French fries!
The quantities here are for two. It’s ready in 45 minutes or so.
- 4-6 medium potatoes
- 1 tablespoon of olive oil
- Optional: ½ teaspoon of paprika or 1 teaspoon of garlic powder
Preheat the oven at 220 degrees Celsius.
Prepare the potatoes: wash them, peel them (or not for more rustic fries!), cut them into sticks, rinse them and dry them.
In a freezer bag, add the olive oil, the paprika and garlic powder if used, and the potatoes. Close the bag, and toss to coat.
Line an oven tray with some parchment paper, and spread the fries in a single layer. Bake until golden, about 30 minutes. At mid-cooking, flip the fries, and toss once a while after that.
Remove from the oven, and transfer the fries to a serving bowl. Sprinkle with salt, and eat at once!
