Here is the simple recipe to make some citrus syrup. It’s not too sweet (my homemade syrups tend to be a lot less syrupy than store-bought ones!)
The quantities here make about 3 cups of syrup.
Ingredients
- 1 cup of water
- 1 cup of Demerara sugar
- ½ teaspoon of pure vanilla extract
- 3 lemons, 3 oranges and 1 grapefruit to make 1 ½ cups of citrus juice
Preparation
Add the water, sugar and vanilla extract in a small saucepan over medium heat, and bring to a boil, stirring often to dissolve the sugar. Remove from the heat, and let cool to room temperature.
Juice the citruses, and transfer the juice to a bottle (with a lid). Add the syrup, and shake to mix. Keep in the fridge.
Drink the citrus syrup diluted with ice water, in a hot tea… or eat with yogurt, pancakes, ice cream…
