


I found some fresh figs at the souq on Friday – likely the last ones of the season, and I made these fig and goat cheese toasts twice during the weekend! It’s a simple, vegetarian dish with great effect. Yummy on its own, or served with a baby leaf salad for Meatless Monday.
The quantities here are for 2 people (4 toasts). It’s ready in 20 minutes or so.
Ingredients
- 4 slices of bread (I use whole grain sourdough bread)
- About 100 g of soft unripened or ripened goat cheese, divided
- 2 fresh figs, sliced
- 1 tablespoon of honey, divided
- Freshly ground black pepper
Preparation
Preheat the oven at 225 degrees Celsius.
Place the slices or spread the goat cheese on the toasts. Top with the figs, and drizzle with honey. Season with black pepper.
Bake in the oven for 8 minutes, or until the cheese is lightly golden and melted.
And eat at once!
