


When we were in Iceland, we ate some yummy skyr blueberry. Skyr is an Icelandic strained yogurt-like cheese made from skim milk. It’s creamy and tangy like Greek yogurt, but a bit thicker. I made this simple blueberry and apple yogurt dessert inspired by the skyr blueberry (but obviously not the same thing!).
The quantities in the recipe are for 3-4 servings.
Ingredients
- 3 apples, peeled and diced
- ½ cup of frozen blueberries
- 2 ½ tablespoons of water
- ½ tablespoon of honey
- Greek yogurt
Preparation
In a small saucepan over medium heat, add the apple, blueberries and water. Stirring often, cook covered until the apple is in purée, 12 minutes or so.
Remove from the heat, stir in the honey, and let cool to room temperature.
Divide the compote into individual serving glasses, top with some Greek yogurt, and chill in the fridge covered until eating time.
