


Here is my simple recipe to make delicious, fluffy buttermilk pancakes, just in time for Christmas breakfast!
The quantities here make 6 pancakes.
Ingredients
- 1 cup of buttermilk
- 1 egg
- 1 teaspoon of pure vanilla extract
- ½ cup of whole wheat flour
- ½ cup of plain flour
- 1 tablespoon of demerara sugar
- 1 teaspoon of baking powder
- Pinch of salt
- A bit of unsalted butter, melted
Preparation
In a small bowl, combine the buttermilk, egg and vanilla extract. Set aside.
In a medium mixing bowl, mix both flours, sugar, baking powder and salt. Add the buttermilk mixture, and stir until just combine (but do not over-mix the mixture, otherwise the pancakes will be heavy and flat).
Heat a non-stick skillet over medium heat. When hot, lightly brush the skillet with melted butter, and spoon the batter using a ¼-cup measuring cup, gently spreading the batter to make a pancake of 10 cm diameter. Cook for about 3 minutes on both sides, carefully flipping the pancake, until golden brown. And eat at once!
Serve with fresh berries (on the picture: I sprinkled some frozen blueberries into the batter when on the skillet) or fresh fruits like apple and banana, and drizzle with some maple syrup.
