


This is the simple recipe to make lovely and colourful goji berry, turmeric, cacao and matcha (green tea) cashew milks. I keep these homemade, flavoured nut milks in small glass bottles in the fridge (up to 3 days) for a natural drink at any time (shake well before drinking).
First, make the cashew milk
- 1 cup of raw cashews
- 5 cups of filtered water
- 1 teaspoon of pure vanilla extract
- A pinch of salt (I use Himalayan salt)
Preparation: soak the cashews with 2 cups of water in a bowl for 4 hours. Drain, and rinse them well. Then blend the cashews with 2 cups of water, the vanilla extract and a pinch of salt in the blender at high speed for 1 or 2 minutes, until smooth and fluffy. (There is no need to strain the cashew milk.) Top up with more water to make 4 cups of milk in total. Transfer the cashew milk to a jug, and set aside.
Goji berry cashew milk
- 2 tablespoons of dried goji berries, soaked in water for a few minutes to rehydrate them and drained
- ½ teaspoon of raw virgin coconut oil
Preparation: in the blender, combine 1 cup of cashew milk, the goji berries, coconut oil, and blend until smooth. Serve chilled.
Turmeric cashew milk
- ½ teaspoon of ground turmeric
- ½ teaspoon of raw virgin coconut oil
- 1 teaspoon of honey
Preparation: in the blender, combine 1 cup of cashew milk, the ground turmeric, coconut oil, honey, and blend until smooth. Serve chilled.
Cacao cashew milk
- 2 teaspoons of unsweetened raw cacao powder
- ½ teaspoon of raw virgin coconut oil
- 1 teaspoon of honey
- ½ teaspoon of pure vanilla extract
Preparation: in the blender, combine 1 cup of cashew milk, the cacao powder, coconut oil, honey, vanilla extract, and blend until smooth. Serve chilled.
Matcha (green tea) cashew milk
- 1 teaspoon of matcha (green tea) powder
- ½ teaspoon of raw virgin coconut oil
- ½ teaspoon of honey
Preparation: in the blender, combine 1 cup of cashew milk, the matcha powder, coconut oil, honey, and blend until smooth. Serve chilled.
