Here is the recipe for a yummy, vegetarian sandwich for Meatless Monday. This halloumi and avocado sandwich is great for brunch, simple to prepare, and looks pretty!
The quantities here are for 2 sandwiches. It’s ready in 15 minutes or so.
- 2 large slices of rye bread
- 1 ½ tablespoons of olive oil, divided
- 4 slices of halloumi
- 6 cherry tomatoes, halved
- 1 ripe avocado, pit removed, peeled, cut in two and sliced
Toast the bread.
In the meantime: in a large frying pan over medium-high heat, add 1 tablespoon of olive oil, and cook the halloumi on both sides until golden. At the same time on the other side of the pan, roast the cherry tomatoes, adding just a little bit of salt.
Garnish the bread with avocado slices, and add the cherry tomatoes and halloumi. Drizzle with the remaining olive oil, season with pepper, and enjoy!
