I bought a large tin can of peach halves in light syrup, and with them I made two nice, simple desserts – this one, and an ice cream for which I’ll post the recipe tomorrow.
The quantities here serve 2. It’s ready in less than 15 minutes.
- 4 canned peach halves in light syrup, drained + 1 teaspoon of the light syrup
- ½ teaspoon of ground cinnamon
- ¼ teaspoon of ground ginger
- 1 teaspoon of honey
- 2 teaspoons of pistachio, roughly chopped
- 1 plain yogurt
Mix 1 teaspoon of light syrup with the cinnamon and ground ginger. Brush the top of the peach halves with the mixture.
Roast the peaches under the grill of the oven for about 5 minutes.
In the meantime, dress two individual dessert plates with yogurt.
Remove the peaches from the oven, and place them on the plates. Garnish with pistachio and drizzle with honey.
And serve at once!
