


I made this quick-to-prepare, tasty raw kale and chickpea salad yesterday for lunch. Perfect for a packed lunch!
The quantities in the recipe serve 1 as a main dish, or 2 as a side dish. It’s ready in less than 10 minutes.
Ingredients
- 1 tablespoon of olive oil
- ½ tablespoon of apple cider vinegar
- Salt
- Pepper
- 2 cups of finely shredded kale (thick stem removed)
- ¼ small onion, peeled and finely chopped
- ½ cup of cooked chickpeas
- 1 tablespoon of dried cranberries
- 1 tablespoon of almond flakes
Preparation
In a serving bowl, mix the olive oil, vinegar, salt and pepper to taste, until smooth. Add the kale, onion, chickpeas, dried cranberries, and almond flakes. Toss well, and enjoy!
